Sweet potato mash with soy sauce and maple syrup – the ultimate umami-sweet side dish that'll steal the spotlight. Easy, quick, and full of flavour. The soy brings the umami punch, the maple gives it a sticky little wink, and the combo is just plain sexy. This is the ultimate side dish for when you want a bit of sweet and salty action on your plate. Serve it up with crispy chicken thighs and a Mexican corn salad and watch people dribble.

Sweet Potato Mash Recipe
Serves: 4 (easily) Difficulty: Easy
Ingredients
1 kg sweet potato, peeled and diced (similar sizes = even cooking)
55g butter
2 heaped tbsp crème fraîche
1/2 tbsp maple syrup
2 - 3 tbsp soy sauce (start low and add more depending on taste)
Chives, optional (if you're feeling fancy)
Method
Chuck your sweet potato into a big pan of cold, salted water. Rule of root: Anything that grows underground = cold water start.
Bring it to a boil, then simmer for about 14 mins or until you can poke them with no resistance.
Drain and mash with the butter first. Add the crème fraîche, mash again.
Now for the magic: stir in the maple syrup and soy sauce. Keep mashing ‘til smooth, taste and balance if needed.
Optional: garnish with chives
Serve with something crispy and juicy — I go for chicken thighs and our Mexican corn salad.
Top Tip
If it grows underground = cold water start. Overground = boiling water drop. Simples!
